Missionary Monday

ME: Are you banned from driving now?

ANDREW: I am for now ... how long the ban lasts depends on whether or not there are any unbanned drivers with me. The general feeling seems to be that since it was wet conditions my ban might get lifted sooner than others. I’m ok with it though because I'm still not very comfortable driving a stick.

Here’s that recipe if anyone else is interested
Potato Cheese Soup
3 medium potatoes, peeled and cut up
1 small onion, finely chopped (1/3 cup) [I substitute onion salt or powder]
Milk
3 tablespoons butter or margarine, melted
2 tablespoons all-purpose flour
2 tablespoons snipped parsley [I leave this out]
3/4 teaspoon salt
dash pepper
1 cup shredded swiss cheese [I use cheddar]

In a 2 quart saucepan add potatoes and onion to 1 cup lightly salted boiling water. Cover and cook about 20 minutes or till potatoes are tender. Mash potatoes slightly; do not drain. Measure mixture and add enough milk to make 5 cups. Blend melted butter, flour, parsley, salt, and pepper. Stir into potato mixture in saucepan; cook and stir till thickened and bubbly. Add cheese [turn down low before adding the cheese, the soup needs to cool a little or the cheese will be rubbery]; cook and stir till cheese is melted. Serve immediately. Makes 4 or 5 servings. [For you guys probably more like 2-3 servings]
